Ask ten people what their coffee should taste like and you'll get ten different answers. Some want something bright enough to wake them up before it even hits their lips. Some want it smooth and sweet, no apologies needed. Some want something dark, earthy, and unbothered — a cup that tastes like it's been through something.

Coffee isn't one flavor pretending to be many. It's genuinely different depending on where it's grown — the altitude, the soil, the way it's processed after picking. That's why a coffee from Ethiopia doesn't taste like a coffee from Brazil, and neither one tastes like a coffee from Sumatra. It's not marketing. It's geography.

Broadly, single-origin coffees tend to fall into a few families:

Bright and fruity. Origins like Ethiopia, Kenya, and Rwanda produce coffees with lively acidity and berry-forward, floral notes. These are the cups that wake something up in you — the ones that taste like they have somewhere to be.

Sweet and smooth. Origins like Colombia, Brazil, and Honduras lean into balance — nutty, chocolatey, low-acid cups that don't fight you. Reliable. Comfortable. The cup you don't have to think about to enjoy.

Earthy and bold. Origins like Sumatra, Guatemala, and Uganda bring heavier body, deeper spice, and less brightness. These are the cups with weight to them — the ones that taste like they've done some living.

None of these is the "correct" coffee. They're just different missions, different terrain, different jobs to do — same as anything else worth doing right.
